Cilantro and an Heirloom Tomato

The upside/downside to having herbs in the garden is the vast quantity of whatever particular herb you are growing.  Witness my cilantro:

First world problems, I know.  A whole container full of cilantro just required me to make some corn relish.  It’s one my go to recipes when I need a cool summer treat.  Actually, it’s not really a recipe.  I just make sure I have a couple cans of black beans, about a pound of corn kernels, diced onion, the juice of a few limes, cumin, salt, black pepper, and some diced tomatos added right before serving.  Served cold with tortilla chips.  Yum!

It’s amazing how the availability of produce has changed over the last 5 years or so.  Who would have thought that heirloom tomatos would be available at Hy-Vee:

I have no idea what variety this tomato is, but it was yummy and it was local.  Hy-Vee is also carrying local produce and identifies the farm from which the produce came.  Yep, it’s pretty awesome.

  1. How do you keep you cilantro from bolting? I had cilantro for a week, and it bolted. Boo! It’s unseasonably warm, so maybe it’s just this year….
